“Sushi Kuuya”

The name of our restaurant, Sushi Kuuya, gets its unique name from a local slang in Hakata.

In Japanese, “食うや” (Kūya) is an informal expression often used in certain dialects, particularly in the Kansai region, which includes cities like Osaka and Kyoto. It is a casual way to say “let’s eat” or “eat up.” The standard Japanese equivalent would be “食べよう” (Tabeyou).

Our team is deeply passionate about preserving and sharing the art of traditional sushi-making. We take pride in upholding time-honored techniques and styles while also enhancing your dining experience. Our dedication extends beyond just the food; we carefully select drinks to perfectly pair with each dish, aiming to elevate your meal and make every visit unforgettable.

Our rice

At Sushi Kuuya, the essence of sushi lies in its rice, and Chef Goji understands this perfectly. He blends three different types of rice, each adding its unique texture and flavor. He infuses his secret vinegar recipe into the mix to ensure that each batch of rice is freshly cooked and seasoned for every serving.

Our style

Unique omakase experience that goes beyond traditional sushi. Enjoy a menu that blends classic sushi with a variety of cooked dishes—deep-fried, grilled, steamed, and more. Chef Goji loves to get creative with these dishes, adding extra flair to your meal.

Chef Goji Kobayashi

Born in Los Angles, Goji embarked on his culinary voyage in Otaru, Hokkaido, before returning to the United States to refine his skills in Los Angeles and further polished his skills at a Michelin-starred restaurant in San Francisco.

A dynamic young chef is passionate about preserving and sharing the traditional techniques and styles of sushi-making. Having trained under a revered fish master in Shizuoka, he deeply honours and respects the sea life that becomes a part of our meals. This respect is evident in his careful preparation of fish, a ritual he approaches with reverence and skill.
